What's new at Fine's Cellar...

Wow, it’s already August, school is just about to start and the summer is almost over. Finally we can see “light at the end of the tunnel” and can start looking forward to the end of the summer heat.

A lot of stuff is going on at Fine’s Cellar and I want to bring you up to speed. First, as I’m writing this eNewsletter the mist system under our shade sails on the patio has just been installed. Holly Cow Batman, what a difference! As well we’ve listened to your comments and needs; we are converting our Coffee Bar space in to a Private Dining Room. Since we’ve opened, guests have been asking for a private room and, we are in the process of conversion right now. Our plans are into the City of Scottsdale for the approval process, so we should be up and running sometime in early Fall. These are just a few of the new things going on at Fine’s, and we have a lot more new stuff – new hi-top tables in the bar, two lounge areas with couches and one coming soon to the patio (as soon as the weather permits), new events, expanded inventory including a giftware section (product is on it’s way right now), a new look to our Web site with a 360 degree virtual tour of the whole space and much, much more! Last but not least I have these two incredible pre-sell offers on 2004 Silver Oak Alexander Valley Cabernet and 2006 Caymus Napa Cabernet. Fine's Finds: Presale Specials

You now have two more great reasons to stop by the Fine’s Cellar wine shop. We are now offering a pre-sell opportunity on two outstanding California wines.

2004 Silver Oak Cabernet Sauvignon, Alexander Valley
The 2004 Alexander Valley Cabernet Sauvignon is a refined and complex wine that combines subtlety and depth. It has a dark ruby color with a deep red edge and displays aromas of fresh blackberries, violets, cola, nutmeg and licorice. In the mouth, the wine has a juicy attack and offers great expression of fruit and spice on the mid-palate. Its fruit-driven finish is long and elegant. Properly cellared, this wine should give drinking pleasure through 2023. This vintage was “the year of the fire” and the estate lost a considerable amount of wine. It has driven the price up about $10 per bottle and limited the amount of wine in the market place. Regular retail is $73.99 with a regular case price of $66.59.

2006 Caymus Cabernet Sauvignon, Napa
For 10 years running this Cabernet Sauvignon has never received a rating less than 90 points by the Wine Spectator. It is the only American Cabernet that I personally collect and anything that Chuck Wagner and Charlie Wagner have their hands in I want to buy. The list of their accomplishments is long – Conundrum, Treanna, Mer Soliel, Caymus Sauvignon Blanc, and in the old days Caymus Zinfandel, and last but not least...Caymus Special Selection Cabernet Sauvignon arguably the best cabernet produced in California in any given year. On top of all this Chuck has changed the label of Caymus Napa Cabernet with the release of this vintage and won’t let anybody see it until it’s released. Hear the Bell ringing “Come and get it ya’ll”.  Regular retail is $74.99 with a regular case price of $66.98.

We have a very good allocation of this wine, but it’s bound to be a hit so as with the Silver Oak it must be first come, first serve.

This is a pre-sell, so the wine is not yet in Arizona. As soon as it arrives we will call  and let you know your order is ready for pick up. Be patient, it may take 2 to 3 weeks to arrive.

 

 

A Special Recipe from Chef Cullen

Fresh Mussels served in Golden Beet Broth (serves 6)

Ingredients
2 lbs - Mussels
4 - Golden Beets
12 oz - Dry White Wine (Try 2006 Fortress Sauvignon Blanc, Lake County)
6 oz - Chopped Garlic
6 oz - Chopped Shallots
24 oz - Vegetable Stock
3 oz - Oil
1/4 oz - Chopped Tarragon
1 oz - Butter
Salt to taste
Serve with a warm baguette

Roast beets at 300 degrees for one hour and let cool
After cooling peel and cut Beets into 1 inch sq. cubes
Sauté garlic and shallots in hot oil for 30-45 seconds
Add beets, white wine, vegetable stock and let simmer for 25 minutes
Place beets and liquid in blender and puree
Put mussels in a pan on high, add puree and cover
Cook until mussels open, then add butter, tarragon, salt and serve with a toasted baguette

Wine 101 Seminar Saturday, August 30, 2008
Learn the basics of wine and beyond from 1:00 p.m. to 3:30. While this is the third in a series of classes, first-timers are welcome. You’ll taste at least 5 wines, which will be accompanied by some nibbles from our chef. Each class is $30 per person and personally taught by Mike Fine. Reservations required as space is limited.
